As a passionate sports fan and beer lover, Dillon Saunders saw the perfect opportunity to bring his vision of a Cheers-style sports pub to life-right in the heart of Carmel Valley Village.
With years of experience in luxury resorts and a deep connection to his family's winery, Dillon was ready to create a place of his own. Drawing from his time working across all areas of hotel hospitality, he set out to design a welcoming spot where sports, beer, and wine enthusiasts could come together.
Enter Dillon’s Barrel Room—a warm and inviting sports pub that blends Dillon's love of the game with his family's winemaking heritage. In addition to catching the latest games over a pint, guests can enjoy tastings of Boëté Wines, proudly crafted by the Saunders family.
